P.S. on the Bubble and Squeak

I showed the recipe card to L and asked her if she knew why it was called that and she had no idea. She said it's what they do with leftover vegetables. She then said, "They're trying to make it quite posh, aren't they?"

Best cooked in a cast iron frying pan or a very heavy based pan. Some butter and oil heated, then throw in your left over cabbage and greens leftover from Sundays roast dinner (so make lots of it)and then mashed potatoes, medium heat, use a fork to press the mix down and leave for lengthy periods before turning and mixing occasionally with the object of getting a crispy bottom that as you turn around becomes crispy throughout the whole dish. This process takes about twenty or so minutes. We like to serve it with pickled beetroot. A great supper dish for pennies !! It gets its name from the cooking process because it should be able to bubble and squeak as it cooks - if you have got it hot enough.
